식품 보존료의 국내외 지정현황 및 사용현황

초록
Among food additives, preservatives are used to prevent quality deterioration caused by microorganisms and extend the shelf life of food, and 28 types of standard specifications and usage standards are provided for the purpose of preservatives. Globally, the status of food additive designation varies depending on the countryʹs food safety management policy, food consumption patterns, etc. In this study, we investigated the designation status and usage standards for preservatives by country (CODEX, EU, Japan, USA, China, and Australia), and determined the domestic production and import status of preservatives. As a result, there were significant differences in standard specifications and usage standards by country, and imports were found to be significantly higher than domestic production. For efficient preservative management, international standardization and updates of specifications and analysis methods are necessary, and continuous monitoring is expected to reduce trade friction and contribute to the development of the domestic food industry.
