Development of a Questionnaire for a Health Functional Food Consumption Survey and Estimation of Nutrients and Functional Ingredients Intake among Korean Adults

This study investigated the actual consumption of health functional foods and estimated the intake of nutrients and functional ingredients among Korean adults using surveys. A two-step survey was conducted to improve the estimation accuracy, and questionnaires tailored to the objectives of each step were developed. The first online survey to identify the distribution of consumers was conducted in August 2021, targeting 2,000 adults selected from a sample in proportion to the national population. The secondary survey to determine the intake of actual consumers used a visiting interview method that collected photographs of products consumed in August and September 2021, with 500 nationwide adults who consumed health functional foods. Based on the estimated intakes of 185 nutrients and functional ingredients from the secondary survey, the average ratio of actual daily intake compared to the recommended daily intake from products was approximately 0.9. On the other hand, regarding the intake of most components, the distribution was skewed to the right, and the proportion of zero intakes was high at the median and above. There were cases of intake exceeding the tolerable upper intake level (UL) for some nutrients. We suggest a health functional food intake survey system for Korean adults and the advancement strategy for this study. In that case, it will be possible to calculate highly reliable nutrients and functional ingredients intake estimates, and selection and management for over-intake are possible.
