Over the recent decades, the contamination of food and crops by spoilage fungi and their mycotoxins has become a severe global concern that not only causes enormous losses in food production and quality but also poses serious risks to human health. How to effectively decontaminate fungal contamination has persistently occupied a place on the list of “global hot-point” concerns. Nowadays, a novel non-thermal technology of photodynamic inactivation (PDI) holds great potential as an efficient, economical, safe, eco-friendly, and sustainable strategy to mitigate the above challenges. This review systematically summarizes recent advances in PDI applications for fungal and mycotoxin decontamination in food and crop systems. The fundamentals of PDI and the role of three essential elements (light sources, photosensitizers, and oxygen) are first introduced and discussed. The effects and action mechanisms of PDI against various fungi and their applications in food and crop are then highlighted and discussed. Apart from the antifungal effects, the efficiency of PDI against mycotoxins and the underlying inactivation mechanisms are discussed in detail. Finally, we put forward the major challenges that may hinder the industrial application of PDI and suggest future research directions. This review provides a comprehensive understanding of the antifungal and anti-mycotoxin capacities of PDI and raises challenges and trends for future study, which will offer valuable guidance for the development and practical application of this technology. Overall, this review demonstrates that PDI has great potential for successful decontamination applications in the food and agricultural sectors.
